Shellfish Farming, is prevalent along the shorelines in Croatia, where excellent oysters, mussels and some clams are grown.  Anyone can stop by and purchase shellfish right from the shellfish farmer, for the freshest shellfish possible.  And nearby many shellfish farms, are great restaurants that feature shellfish plucked right from waters of the local shellfish farm, which is a highlight on any menu.  One of our favorite shellfish restaurants is Bota Sare Restaurant located in Mali Ston, Croatia, near Dubrovnik, which is easily visited on a crewed private yacht charter, just by cruising up Ston Bay.

As is true with every other shell farm located worldwide, it is the mineral and salt content of the particular waters in which the shellfish are grown that provide a specific taste to any farmed shellfish.  We love the oysters and mussels farmed in the waters in Ston Bay off of Mali Ston, outside of Dubrovnik, as these brackish waters, fed by a fresh water river emptying into Ston Bay, produce oysters and mussels with outstanding flavor. Located in Ston Bay right in front of the Island of Banje, is the shell farm for all of the Bota Sare Restaurants; all of which serve excellent, and extremely fresh oysters and mussels offered in many different ways.

Oysters raw, pan fried in a light batter, cooked in several different sauces, and our favorite, cooked, in the shell, over a wood burning fire are all on the menu at Bota Sare Restaurant in Mali Ston, and are all terrific.  We even ordered a second serving of oysters cooked in the shell over a wood burning fire.  Mussels are prepared in several different ways as well: including being steamed in various broths, creating tender, fat, steaming mussels brought right to the table in the cooking pot, along with fresh bread cooked in a wood burning oven.  The recipes in use by Bota Sare Restaurants, were found, claim the Owners, in two dusty old books in the basement of their home.
